Five things to know before you buy
1 Combination or multi-function steam ovens brown as well as steam.
2 Steam-only ovens are pressurised or non-pressurised. Non-pressurised cook up to 100°C; pressurised cook up to 20°C higher. Pressurised ovens, which tend to be at the top end of the price range, halve cooking time, but are too powerful for dishes such as fish and some desserts.
3 A range of 50°C to 100°C is standard, while 30°C to 100°C plus can be expected for top-end models.
4 Find out how the steam is produced: top models create the steam outside the oven cavity, injecting it into the food to 'flash-seal' the flavour in.
5 Safety features you may want to consider include child locks, residual heat indicators and triple-glazed doors.
